It is not often that we outdo ourselves, but our 2005 Pinot Grigio definitely
has. This bright, outgoing wine has an intense perfume and a crisp, dry
finish. (Update: Our 2006 Pinot Grigio is coming early 2007!)
Fresh aromas of green apples and pears. A lighter-bodied wine
that is dry with a bright crisp finish. This refreshing wine
is best served chilled for an almost mineral water like experience.
This clean and crisp Pinot Grigio is best served chilled. It
pairs well with light flavored foods such as
fresh fruit, cheeses and gourmet deli meats. A wonderful wine for summer-time
gatherings with lots
of finger foods.
The Clarksburg appellation is known for producing top quality
Pinot Grigio,
mainly due to its ideal climate. As the Sacramento
Valley heats up during the day, it
pulls in the cool maritime breeze
from the bay, which allows warm
summer days and cool evenings. We
take special care in all aspects of our
grape growing from deficit irrigation,
to precise pruning techniques, to
handpicking at harvest.
Grapes were handpicked in the cool
morning and gently pressed, whole
cluster, in our new Diemme membrane
tank press. This fresh juice was cold
settled in a temperature controlled
stainless steel tank for 36-48 hours.
Clean juice was racked from the solids
and fermented cold in a stainless
steel tank. After fermentation, the
wine was racked off fermentation lees
and allowed to age in a mix of neutral
oak barrels and small stainless steel
barrels. After a couple of months on
light lees, the wine was racked from
barrel and then bottled.
