Light, crisp clean taste with aromas of tropical fruit and ripe
pear. The Chardonnay adds complexity and the combination of
Chenin Blanc leaves the wine well balanced with a pleasant crisp
acidity.
This crisp Chardonnay blend is a great wine by the glass and
can be enjoyed with pork, veal, poultry, pasta, fish and shellfish.
A perfect complement to spicy dishes as well, such as Chinese,
Thai, Indian and Latin fare. Best served slightly chilled.
The Clarksburg appellation is known for producing top quality
Chardonnay and Chenin Blanc, mainly due to its ideal climate
for those varietals. As the Sacramento Valley heats up during
the day, it pulls in the cool maritime breeze from the bay,
which allows warm summer days and cool evenings. We take special
care in all aspects of our grape growing from deficit irrigation,
to precise pruning techniques to handpicking at harvest.
Grapes were handpicked in the morning and gently pressed. Juice
was cold settled and initally fermented cold in stainless. The
wine finished fermentation in small oak barrels, with some Chenin
Blanc staying in stainless steel to preserve its fruit character.
The wine then underwent sur lees aging for six months. 25% of
the wine underwent secondary fermentation to round out the palate.
