Deliciously refreshing, considered by many to be Spain's premier quality white
wine. This is a dry wine that's a cross between a Sauvignon Blanc with
a vibrant personality and a Chardonnay, with a Viognier aroma and mouth feel.
Expressive aromas of passion fruit, citrus and honeyed peaches, with a vibrant,
mouthwatering acidity. Typical Spanish Albarinos are intriguingly perfumed
but razor-sharp on the palate. Dancing Coyote has captured the wonderfully
heady bouquet, but slightly softened the acidity while still maintaining the
intense vibrancy.
Albarino is great as an aperitif, but also pairs well with shellfish, spicy
Asian dishes and tapas.
The Clarksburg appellation has an ideal climate for producing
this unique Spanish grape. As the Sacramento Valley heats
up during the day, it pulls in the cool maritime breeze from
the bay, which allows warm summer days and cool evenings. We
take special care in all aspects of our grape growing from
deficit irrigation, to precise pruning techniques to handpicking
at harvest.
Grapes were picked in the morning and gently pressed. Juice
was cold settled and fermented cold in stainless steel tanks.
The wine was aged on light lees and kept cold for five months.
The wine was then finished for bottling, never seeing any oak
or malo-lactic bacteria.
